Journey Up

Hello and welcome Spring.  Wow, was I busy these last two months!!  I did not forget you guys.  Matter of fact, I created more flavors of Chee’Bonnets, the ultimate cheesecake ball.

I also picked the winner of my “Chee Flavor of the Month” contest…are you ready??…drum roll please….the winner is………….Percy!!! Yeah, Percy you won with your Tiramisu flavor Chee’Bonnet, so be ready to get a shipment all for yourself!  Hope you like them.  They have a hint of coffee liquor and are made with creamy mascarpone cheese.

 

I do hope that all of you are doing well and we did have a fantastic winter, didn’t we? 

Now that Spring is in the air, it reminds me of new life!  Refresh yourself and start growing leaps and bounds just like the buds coming up from the cold ground.  The warmth of the sun brings so much comfort and calmness.  I am ready to strike with new challenges and hopefully pass all the obstacles that come my way.  I always tell myself and I am going to tell you that you must cherish the people around you.  We do need each other no matter what.  At the end of the day it’s pray and people that help, motivate and keep you going.  Without those elements we are nothing.  I also learned that the more you give, the more you get in return.  It’s a full circle.  I don’t just talk about material things either.  When you give of yourself, its amazing how you feel.  Just to see another person happy is worth a million dollars to me.  Money cannot buy that. 

 

Well, are we ready for Spring??  Get yourself up, dust off the cobwebs and give it your all.  This is your world and your life.  Make a difference; we all have that in us! A very, very dear friend gave me this wonderful quote about our journey and to get me through the tough times, I hope it works for you as it did for me….

 

Journey up
 
The journey up to where you want to go is not a straight line,
or even a steady grade.
 
You go around corners, crossing the path you've taken,
able to look back down to where you've been but not quite up
to where you want to go.
 
The best you can do is hold on to a general sense of direction,
counting the steps for morale, keeping towards the light.
as best you can.
 
The hall lantern may be lit, or dark, so you need a little faith
that those sloping ceilings cobwebs, whatever grows in those dusty corners won't get in your way, 
because you really have no choice.
 
Going back down is not an option and the steps, though uneven, 
rough and steep will eventually take you where you need to go.

 

I hope I bring my best to you and will strive to be better and better.

As we enter Spring, I want to give you this wonderful recipe that is light and airy and full of spunk!! It’s also an Italian favorite among desserts:

 

pat pilla chee'bonnet

Ricotta Cheesecake (Torta di Ricotta)
32 ounces ricotta cheese
6 eggs, at room temperature
1 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
Zest of 1 lemon
Zest of 1 orange
*1/2 cup mini chocolate chips

Grease and flour one 9-inch springform pan. Set aside.

Preheat the oven to 325 degrees.

Meanwhile, beat the ricotta cheese with an electric beater until fluffy. Add the eggs, one at a time. Then add the sugar, flour, salt, cinnamon, nutmeg, vanilla, and zest. *Fold in mini chocolate chips if you prefer. Pour batter into the prepared cake pan. Bake until cheesecake is golden, and firm in the middle—about 1 hour and 10 minutes.  The longer the cheesecake stays in the fridge the better it is.  The flavors come together nicely.

Well I hope you like the recipe along with the inspiration.  Nothing like a little inspiration with a rock your socks off recipe!!!  Life is GOOD!!
