Feeling the love...

Well here we are, already into February and February is the month of LOVE!!!  Yes I said LOVE!!! 

Let’s make the joy of love surround you for the month of February and maybe if you spread the love around more and more each day you will have this joy all year round!!!!

I have been feeling the love all around me with all the wonderful people I have been meeting.  I don’t think it’s me though that they love, even though I am witty, funny, charming and sometimes even a little nutty.  I think it’s more the love of the Chee’Bonnets.  Boy oh boy people are going gaga over these little creations.  I see the love in their eyes when they take a bite of these little cheesecake delights and it brings me so such joy and pleasure!!!  See guys, LOVE brings JOY!!!

When I feel down and overwhelmed, I instantly pick myself up and count all the blessings in my life.  Believe me, life sometimes is not a picnic, but why should you be a victim???  We are only on this earth but once and as we go through this ride, yeah we will make mistakes and have trials and yeah some of them will be major…but in reality, who really cares.  Just pick yourself up, dust yourself off and move along.  Every single minute of life brings us a new beginning.  Don’t be your enemy, be your best friend and love yourself!

I find that thinking funny thoughts about the things that happen or happened in my life eases the tension.  They might not be so funny as they are happening, but when you look back, how many times did you say to yourself, “what the heck”??  Yeah, “what the heck”?  There was nothing we could have done at the time perhaps, but when you look back, listen to me; we are still here for another round!!  We have to take this ride sometimes to move us further to where we ought to be.  Life is like a roller coaster and the bumpy ride sometimes makes you sick to your stomach, but if you hold back from throwing up, it’s amazing what you find at the end of the ride. 

Love is universal!! We all have it and we all need it!!  Being loving to someone who is nasty or unkind is not an easy task, but you will be amazed what happens to the nastiness.  It seems to turn right around.  Maybe not in one day, but believe me, eventually it turns around.  The more love the less sorrow.  The transformation is amazing!  Love is like butter, waiting to be spread!

 I truly believe in “paying it forward”.  Love does not come with a price.  As a matter of fact, love is totally priceless!  You have nothing to lose.  The joy in itself to see someone’s smile and a gleam in their eyes because you just said to them “hi, how are you doing?” and really meant it, is just a wonderful feeling and that feeling is called LOVE.

So for the month of February, bring on the LOVE and do it unconditionally.  The joy at the end is unsurpassed by anything you could have ever imagine.

Well for all of you LOVER’S out there, I have the perfect menu for you to create for that special sweetheart in your life.  I am even throwing in a side dish recipe to go with it. So once you cook this little extravaganza up make sure you are ready and able to be well rewarded!!! 

 

Instead of the meat version of Beef Wellington, here is a lighter version using chicken.

 

  

CHICKEN WELLINGTON

Serves 6

Roast: at 425 for 25 minutes

 

1 package (10 ounces) frozen chopped broccoli or chopped spinach, thawed and well drained. (if you are using spinach, squeeze real dry)

1 package (5.2 ounces) garlic-herb* spreadable cheese (like Boursin).

1 package (17 ¼ ounces) frozen puff pastry sheets, thawed.

6 boneless, skinless chicken breast* halves (2 lbs total). 

1/4 teaspoon salt

1/8 teaspoon black pepper

1/4 cup plain dry bread crumbs. 

1 large egg, slightly beaten with 1 tablespoon water.

 

1. Heat oven at 425.  In bowl, stir broccoli or spinach, and cheese to combine. Set aside.

2. On a lightly floured board, roll out each pastry sheet to a 14 x 12 inch rectangle. Cut each sheet into 4 (7 x 6 inch) rectangles.

3.  Season both sides of chicken with salt.  Spread 1/4 cup broccoli mixture over pastry.  Place chicken on top.  Sprinkle with 2 teaspoons bread crumbs.  Brush egg mixture onto edges of rectangle; fold pastry over chicken.  Press the edges to seal.  Place seam side down on ungreased shallow baking pan.  Repeat with each chicken breast.

4. With remaining pastry, using a small heart cookie cutter cut out shapes.  Brush egg mixture over pastry packets and place the cut decorations on top and brush with additional egg mixture.

5. Bake at 425 for 25 minutes or until pastry is golden and meat thermometer registers 160.

*You can use any flavor of the cheese that you like.

*You can also use dark chicken cutlets if you prefer.

 

 

FAN POTATOES

4 servings

Bake at 425 for 50 minutes.

 

4 Medium baking potatoes

2 teaspoons of Italian seasoning

1 teaspoon salt

1/2 teaspoon pepper

1 tablespoon olive oil

1 tablespoon butter (melted)

4 tablespoons finely shredded Cheddar cheese

2 tablespoon grated Parmesan cheese

2 tablespoon minced parsley.

 

1. With a sharp knife, slice potatoes thinly* but not all the way through, leaving slices attached at the bottom. Fan potatoes slightly. No I don’t mean wave at them, I mean with your hands fan them out. Lol

2.  Place in an ungreased baking dish.

3.  Sprinkle with Italian seasoning, salt and pepper.

4.  Drizzle with oil mixture.

5.  Bake uncovered for about 50 minutes.

6.  Sprinkle with cheeses and parsley and bake for an additional 10-15 minutes until lightly browned.

 

*Shhhh..a little secret.  It is so much easier to cut the potatoes if you put them between two wooden spoons.  That way you can cut them faster and more evenly without touching the bottom of them and when you hit the bottom of the wooden spoon you move to the next cut.  Remember this is our secret!!!  

You can also make these potatoes early on and just do step number 6 at the last minute, so everything cooks together.

 

Last, but not least.  What is Valentine’s Day without DESSERT!!  So that is where I come in.  Remember to order your “Red Velvet” Chee’Bonnets in time for this great event. You don’t want to be caught with out them.  Now your dinner will be complete.

Enjoy every moment of this special evening together; add a side salad and you’re done!!  Pour yourself and your sweetheart a glass of champagne, and enjoy each other with great food and conversation and who knows what else!!  Oh Cupid is calling me!!
