Welcome to 2012!

I love the first of the year!!  I say out with the old and in with the new!!  We can all clean up our slate and start anew!!  Isn’t that such a wonderful feeling?  I always say we should do this each and every day, not just once a year!  I always try not to look back because that deters you from moving ahead.  Once we learn from our trials and experiences it’s time to move forward.  Not that we forget the past, we just move on!  

                                             

I had an extremely eventful 2011 but as it past me by, I learned so much and am ready to utilize everything I learned and give it to you.  I have a lot of things up my sleeve for 2012.  I want to give you more insight on the trials and joys of running a business, and even better, more recipes from my collection.   I also want to set up another Chee’Bonnet “Flavor of the Month” Contest.  Cindy from Virginia won the last contest with an awesome Mocha Chee’Bonnet, the ultimate cheesecake ball.  I hope she enjoyed her prize of these delectable treats.  So start getting your thinking cap on and be ready.

 

As we start 2012, let’s make amends with ourselves and promise ourselves to be a better person.  In these tough times, it’s hard to show a smile on our faces, but a little smile to someone who is down and out is precious!!  Always remember when you think your life is so bad, there is always someone else out there that has it worse off.  We have to thank God for each and every day He gives us and rejoice in the good and the bad.  We have to draw our strength from Him and continue to strive for our purpose in this wonderful world we live in.  We are truly blessed!

 

I saw this quote that I thought would be appropriate to start the New Year….

I also found this recipe that I thought you may like to start the New Year off on the right track….It’s a light version of a Quiche and it’s very simple and yet the most delicious eats that you can have.  It’s wholesome and you can basically add whatever ingredients you like.  I never had a bad quiche.  So enjoy and be a little creative…..remember this is your world!!

 

 

 

 

Spinach and Cheddar Quiche

Ingredients      

1/2 cup light mayonnaise

1/2 cup milk

4 eggs, lightly beaten

8 ounces shredded reduced-fat Cheddar cheese

1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry

1/4 cup chopped red onion

1/4 cup grated pecorino romano cheese

Salt and pepper to taste

1 (9 inch) unbaked deep dish pie shell

 

Directions

Preheat oven to 400 degrees. Line a cookie sheet with foil.
In a large bowl, whisk together mayonnaise and milk until smooth. Whisk in eggs and grated cheese.  Add the spinach, cheese, and onion and mix well. Pour in pie shell. Place quiche on prepared cookie sheet. Cover quiche with foil.
Bake in preheated oven for 45 minutes. Remove cover, and bake 10 to 15 minutes, or until top is golden brown and filling is set.
